Cabbage - Baby
Ever heard of a baby cabbage? Bigger than a brussels sprout and smaller than a bread box.
Red Tomato is working closely with Edwin and Linda Matuszko of Twin Oaks Farm in Hadley, Massachusetts to develop baby Gonzales cabbages for the market. Like a traditional cabbage, these babies are a member of the Brassica family. Their heads are round, with tightly wrapped leaves, and creamy, pale green in color. The Gonzales variety is the earliest of all the cabbage varieties to mature and their uniform size and shape makes them an excellent candidate for an early harvest. To wear the label baby, cabbage heads must be 1.5 lbs or under. Anything else is just a small head of cabbage. The tender age of Twin Oaks’ baby bulbs enhances the sweet and spicy flavor of the Gonzales variety - making baby cabbage a single serving treat sure to please the most devoted enthusiast and convince the deepest cabbage skeptic.
Storage
Choose heads of cabbage, with tightly wrapped, crisp outer leaves, that seem heavy for their size. Store cabbage heads wrapped in plastic in the refrigerator for up to a week. Before eating remove the outer leaves if they are wilted or discolored and cut out the core and any tough stalks - in a baby cabbage, these should be minimal.
