The idea started with Karl Dias, a longtime champion of turning overlooked produce into delicious, purposeful food. Years before Parker’s Amazing, Karl pioneered upcycled tomato products, transforming blemished, second-tier tomatoes into savory marinara served in Boston schools and institutions, proving that food labeled “imperfect” still has tremendous value.
The heart of this latest venture was inspired by Parker, Karl’s beloved pit bull mix, whose unbreakable spirit through illness moved him to create something meaningful in his honor. Even after losing a leg, Parker carried on with a sense of joy and determination that stayed with Karl. That spirit lives on in Parker’s Amazing Applesauce, crafted from apples that might be passed over but still has so much to give, sourced from local orchards and grown under Red Tomato’s EcoCertification for sustainable farming practices.

What began with applesauce is just the beginning. Karl is developing more upcycled products like a broccoli cheddar soup that turns broccoli stems and harvest leftovers into nourishing comfort food, again emphasizing local sourcing and waste reduction.
More than just good food, the brand gives back: a portion of proceeds supports animal welfare causes, and Karl continues to advocate for sustainable, farm-to-institution food systems across New England.
